What’s for Dinner? vol. 2

Here was the plan for this past week

Sunday– Crab Cakes or Tuna Patties and Colslaw Recipe here

Monday– Crock Pot Chicken

Tuesday– Fish Tacos Recipe here

Wednesday– Whole Wheat Spaghetti and Newman’s Own sauce

Thursday– Chicken and strawberry Salad and Lentil Soup with Ham

Friday– Crock Pot Steak and Mushrooms, rice, zucchini w/ feta

Saturday– Lunch- Sandwiches or leftovers
Dinner- Frozen fish and fries (I’m lazy on the weekends)

Sunday– Lunch- Turkey Burgers
Dinner- frozen Taquitos (Did I mention lazy?)

Here’s what actually happened.

Sunday– Tuna Patties and Colslaw Recipe here. I was feeling really lazy that night, but Jason convinced me that tuna patties would be a better idea than take-out. He was right.

He also made some tasty grown up drinks involving Bacardi Limon, Sprite, and mint. I added strawberries, which made it all the more tasty.

Monday– We had a lot of errands to run, so ended up eating taquitos.

Tuesday– Little Man came to visit for a bit, so I decided to use that as an excuse to not cook. Frozen fish and frozen sweet potato fries night it is. Didn’t get a photo.

Wednesday– Back in my cooking groove, which was a good thing because I had gone through all my convenience foods. Crock pot chicken, mac and cheese, and broccoli and cauliflower mix. I’ll post the chicken recipe soon.

I also made homemade peppermint patties! I used this recipe from How Sweet It Is. Oh My Goodness. These were so good! I followed her recipe exactly, including using peppermint extract instead of oil. I was worried it wouldn’t make very much when I saw the amount of filling, but once I made the balls and squished them with the bottom of a coffee cup, they made twelve good sized patties.

Not super pretty, and next time I’ll use 1.5 cups of chocolate chips instead of 1. But super tasty. Okay one more pic. Can you tell this was my favorite thing I cooked this week?

Thursday– Fish Tacos Recipe here. I could seriously eat these several times a week.

Friday– Lentil and sausage soup and bread. I need to blog both of these recipes. We ate the soup for days and I’m going to use the rest of the bread tonight.

Saturday– Crock Pot Steak and Mushrooms. Okay this is one of those recipes where I really wish I had a better camera. My photo looks pretty gross. But it’s really tasty. Recipe soon. This is the second time I’ve made it, and I might make it one more time before I post the recipe. It might need a tweak or two.

Sunday– Di Giorno pizza and egg rolls. It was the very first preseason football game, so we decided we needed pizza. And what’s better with pizza than egg rolls?

I found this article on Cupcake Project about chocolate chip cookie grilled cheese sandwiches. So of course I had to try it. It (understandably) grossed Jason out. He couldn’t even look at me when I ate it. I made mine with Walmart deli chocolate chip cookies and Velveeta. Because I’m classy like that. Verdict- they were actually not too bad. I love sweet/ salty combos. They were really messy. I got more cheese on my hands and face than I did in my mouth. I’m not sure if I’ll make them again, but it was an interesting experiment.

Ready for next week’s menu? I’m subtitling it “Garbage Week”. I’m having a small procedure on my eyelid on Tuesday. This will result in me not being able to wear contacts for a week. I also get to rock a sexy eye patch. This will also probably mean not much, if any, computer time for a week. So unless I get really motivated, it’ll be radio silent until I recover from getting poked with needles and scalpels and whatnot. This also means minimal cooking this week. Everything is coming out of boxes and cans.

Monday– Whole wheat spaghetti with mushroom sauce

Tuesday– Take out Chinese

Wednesday– Fish and sweet potato fries

Thursday– Taquitos, refried beans, rice

Friday– Salisbury steak, mashed potatoes

Saturday– Chicken chunks, veggies

Sunday– Slow Cooker Chicken, veggies

So there you have it. Not even remotely healthy. I know after this week I’ll be ready to have an Eat Clean week. I’ll definitely need it!
